the centre of Kanazawa from east, Mt. Udatsu provides

intriguing view of some traditional two-story wooden
houses in Higashichaya District, where the
remnants of the Edo period still remain vividly.

Yamano
is a long-established Japanese restaurant that has
lasted for more than 100 years. Following stone
steps and going through two small gates leads you
to the entrance. The restaurant consists of seven
detached rooms, allowing you to have an intimate
dining experience at your own pace. It is interesting
to note that Rosanjin, one of the most renowned
artists and gourmets in Japan, used to live there.

Yamano's sumptuous
cuisine includes jibuni (a stew with generous
amounts of meat and vegetables), kuchiko
(a delicacy from the Sea of Japan) and nodoguro.
Rosanjin admired them as they all measured up to
his philosophy that no taste is superior to what
natural ingredients exude. Even today the tastes
that Rosanjin once relished are still supported
by a great many enthusiastic gourmet diners. |
