Soba
noodles are considered to be a nutricious and healthy
Japanese food made from buckwheat flour milled from
both the polished and unpolished grain. So-an is
a renowned soba shop in the region, located in the
middle of nowhere on the way to Mt. Haku-san from
Kanazawa City. The shop is an antique Japanese wooden
house featuring an irori, an open hearth set into
a floor with a pile of sticks to make a fire at
the entrance. It has a private room that the owner
converted a storage space into, so as to enable
you to enjoy an intimate dining experience. |

Having
spent eight years learning to make soba in famous
shops in Tokyo, he commits himself to offering soba
that is impeccable in its quality. His commitment
to excellence, however, never loses its momentum,
leading to perfection in every detail from all the
ingredients to facilities. He owns a storage tank
at the back of the shop to preserve soba grain at
the constant temperature of 9 degrees centigrade
with the humidity of 60 percent. In order to provide
customers with the ultimate in quality, he takes
great pains to grind soba grain into flour manually
with what looks like an ancient stone mill. When
boiling the soba noodles, he draws the water from
a well. |
