Located on a rise
overlooking the city, about ten minutes' drive from
the city centre, Jyu-bei is a bar that specializes
in yakitori, bite-size pieces of chicken
grilled on a skewer. Passing under the curtain and
opening the door, you will be welcomed by the owner
and his family in the warm dim light looking very
inviting and casual. Over the counter you will enjoy
watching the owner skillfully cook the food and
the staff work energetically to deal with customers'

Popular though
yakitori and kushiyaki (roasted food on skewers)
are in Japan, the quality of them at Jyu-bei is
outstanding among a great many shops. While at an
ordinary yakitori shops, you dip each skewer in
special sauce before tasting it, Jyu-bei would like
diners to eat the food without any sauce. This proves
that the owner uses carefully selected chicken,
an uncompromising attitude toward quality. Each
yakitori tastes plump and juicy as it is slowly
and carefully grilled over charcoal, which is considered
to be the ideal method of yakitori cooking. |

Other recommended
dishes include yakionigiri and grilled squid. Yakionigiri
is a rice ball brushed with soy sauce and toasted.
Grilled over charcoal, it tastes distinctively pleasant.
The surface is tough with the soy sauce soaking
into the rice. Grilled squid is equally tasty as
it is briefly roasted over the charcoal fire so
that it does not become too tough to eat. It turns
out to be reasonably hard with a juicy flavor. |
